Recipe Ingredients for Low Fat Cranberry Citrus Bread

2 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup sugar
2 tbsp canola oil
2 egg whites
1 tbsp orange zest
1/2 cup orange juice
14 cup lemon juice
1 1/2 cups cranberries, chopped

Recipe Directions for Low Fat Cranberry Citrus Bread

  1. Preheat oven to 350 degrees

  2. Spray a 9x5 inch loaf pan with no stick spray

  3. In a medium bowl, stir together flour, baking powder, baking soda and salt.

  4. In a large bowl, beat sugar, oil, egg whites, mixing well. Add orange zest and juice.

  5. Gradually beat in flour mixture until blended. Fold in chopped cranberries.

  6. Transfer batter to loaf pan and bake for 1 hour or until toothpick inserted in centre comes out clean.
