Low-fat version of rich cottage cheese quiche. Still goes well with grilled tomatoes and sugar snap peas.

Recipe Ingredients for Low-fat Cottage Cheese Quiche

216 g (1crust) pie crust
8 oz swiss cheese
4 slices ham
2 teaspoons chopped chives
16 oz non-fat cottage cheese
1 cup non-fat milk
1 teaspoon salt
1/2 teaspoon chipotle chili powder
6 eggs (extra large)

Recipe Directions for Low-fat Cottage Cheese Quiche

  1. Heat oven to 450 F.

  2. Roll pie crust into deep dish pie plate and press edges to fit.

  3. Shred swiss cheese and place in bottom of crust.

  4. Cut ham into slivers and add to cheese.

  5. Sprinkle chives over ham/cheese.

  6. Blend cottage cheese and milk with salt and chili powder on high until smooth.

  7. Blend in eggs until mixed.

  8. Pour into crust carefully.

  9. Bake at 450 F for 10 minutes - reduce heat to 350 F and bake for another 25-30 minutes, until brown and knife inserted in middle comes out clean.

  10. Let rest for 10 minutes before serving.
