'These quick corn muffins use applesauce in place of oil

Recipe Ingredients for Low fat Corn Muffins

1 1/3 cups all-purpose flour
1 1/3 cups cornmeal
1/3 cup nonfat dry milk powder
1/4 cup sugar
4 teaspoons baking powder
1/4 teaspoon salt
8 ounce cream-style corn
3/4 cup water
1/2 cup egg substitute
1/2 cup unsweetened applesauce

Recipe Directions for Low fat Corn Muffins

  1. In a bowl, combine the first six ingredients.

  2. In another bowl, combine corn, water, egg substitute and applesauce; mix well.

  3. Stir in dry ingredients just until moistened.

  4. Fill muffin cups coated with nonstick cooking spray two-thirds full.

  5. Bake at 350 degrees F for 17-20 minutes or until muffins test done.

  6. Cool for 5 minutes before removing from pans to wire racks.
