A delicious bran muffin that is low in calories and fat.

Recipe Ingredients for Low Fat Chunky Bran Muffins

1 cup unbleached all-purpose flour
1 cup whole wheat flour
1 3/4 cups bran, oat
3/8 cup brown sugar splenda
1/3 cup nonfat dry milk
1/4 cup flaxseed
4 teaspoons ground cinnamon
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 cups shredded carrot
2 cups chopped Granny Smith apple
1 cup raisins
1 cup fat-free milk
1/4 cup unsweetened applesauce
2 teaspoons vanilla extract
3 egg whites
1 orange, unpeeled and quartered
1 Cooking spray

Recipe Directions for Low Fat Chunky Bran Muffins

  1. Preheat oven to 375 degrees.

  2. Combine the first ten dry ingredients (the flours through the salt.)

  3. Add the shredded carrot, chopped apple and the raisins.

  4. In a food processor or blender add the milk, applesauce, vanilla, egg whites and orange. Process until smooth.

  5. Add liquid to the dry ingredients and stir until combined.

  6. Place approximately 3-4 tablespoons of the batter in muffin tins sprayed with cooking spray.

  7. Bake for 20 minutes.
