Recipe Ingredients for Low Fat Chocolate Meringue Cookies

6 egg whites, room temp
1/4 teaspoon salt
1/4 teaspoon cream of tartar
1 1/2 teaspoon vanilla extract
1/4 cup unsweetened cocoa
1/2 cup splenda
4 oz semi-sweet chocolate chips

Recipe Directions for Low Fat Chocolate Meringue Cookies

  1. Preheat oven to 250 degrees. Line non-stick baking sheet with parchment paper.

  2. In a small bowl, combine 1/4 cup cocoa and sugar; set aside.

  3. In a large bowl beat egg whites until foamy. While beating add salt, cream of tartar, and vanilla extract. Add the cocoa/ sugar mixture, 1 TBSP at a time, until eggs are stiff and glossy.

  4. Gently fold in chocolate chips.

  5. Drop batter by spoonfuls onto baking sheet.

  6. Bake 90 minutes; turn off oven, open the door slightly and allow cookies to cool in the oven.

  7. Remove from oven and store in a airtight container.

  8. Yeilds 50 cookies.
