Recipe Ingredients for Low fat chicken satay with peanut Sauce

1/2 pound skinless, boneless chicken breasts (cut into 4 strips; about 1 breast)
1/2 tbsp brown sugar
1 tbsp low sodium soy sauce
1 clove garlic, crushed
1 tsp minced ginger
1/2 tbsp lime juice

for sauce:
1/2 tbsp brown sugar
1/2 tbsl low sodium soy sauce
1 clove garlic, crushed
1 tbsp creamy peanut butter
1 tbsp lime juice

Recipe Directions for Low fat chicken satay with peanut Sauce

  1. Cut chicken Breast into 4 strips. Place in a large resealable plastic bag. Combine brown sugar, soy, garlic, ginger, and lime and add to bag. Marinate chicken strips in refrigerator for 1 hour.

  2. presoak 4 bamboo skewers for 30 minutes

  3. preheat grill or broiler, coated with cooking spray

  4. for the sauce, combine brown sugar, soy, garlic, peanut butter and lime juice, stirring till smooth and creamy. thin with water if u like.

  5. Thread the chicken strips on the presoaked skewers. Grill or broil chicken for 10 minutes, turning once. Serve 2 skewers per person with a tablespoon of peanut sauce on the side.
