Low Fat, low sodium chicken salad

Recipe Ingredients for Low Fat Chicken Salad

6 oz Low Fat Mayonnaise Dressing
2 large Egg, Whole
26 oz Whole Chicken
1/4 cup Pickle Relish, Sweet
1 large Onions
5 stalk, large (11"-12" long) Celery
4 tbsp Fat Free Sour Cream

Recipe Directions for Low Fat Chicken Salad

  1. Cook and shred chicken (I poach a whole chicken and then use the broth for soup). You can shred the meat in a food processor or with your KitchenAid stand mixer.

  2. Chop eggs, onion, and celery.

  3. Combine all ingredients in a large bowl and mix well.

  4. Refrigerate for 30 minutes or overnight to allow flavors to mix.
