A wonderful homemade version that is low in calories and fat!

Recipe Ingredients for low fat chicken and dumplins

4 ounce cooked shredded chicken breast
4 cups chicken broth
1 tablespoon carrots
1 tablespoon celery
2/3 cup flour
1 teaspoon baking powder
2 tablespoons flour
1/8 teaspoon salt

Recipe Directions for low fat chicken and dumplins

Combine the first four ingredients in a pot plus a pinch of thyme and bring to a rolling boil. (Progresso chicken broth will give you the best flavor, use this brand for best results). Combine the rest of the ingredients in a bowl, but do not overstir. Drop the dough by very large spoonfuls (or use an ice cream scooper) into the boiling broth mixture. Put a lid on and let it simmer for 10 minuets without taking the lid off. You may have to turn the heat down if it tends to overboil. You may double the dough if you like more dumplings!
