Recipe Ingredients for low fat chicken and dumplings

4 cups chicken
8 cups chicken stock
1 cup celery
1/4 cup parsley
1 cup onion
1 tsp fresh thyme
14 oz evaporated skim milk
2 cups bisquick, reduced fat
3/4 cup non fat milk

Recipe Directions for low fat chicken and dumplings

  1. purchase a roasted chicken from the grocery store

  2. place whole chicken in 8 cups of water and simmer until chicken is falling off of the bone

  3. remove chicken and shread meat, taking out all bones, skin and fat

  4. chop celery, onions and parsley and saute in another skillet - use a little of the broth from the chicken

  5. add to the pot with the broth, add 2 bay leaves and fresh thyme

  6. add chicken and evaporated milk and simmer for 30 minutes

  7. If not thick enough, thicken with a little corn starch.

  8. Mix bisquick with milk and add a little parsley and garlic power if desired

  9. Drop by large spoonfulls onto simmering broth and allow to cook several minutes

  10. Cover pot during this process

  11. When dumplings are set and done in the middle, serve in bowls sprinkled with a little more parsley
