Stir fry with veggies and chicken breast over brown rice

Recipe Ingredients for Low Fat Chicken & Brown Rice Stir Fry

1/4 cup brown rice
1 cup broccoli
1/2 cup green pepper
8 oz. waterchestnuts
2 tbsn soy sauce
1 clove garlic
1/4 tspn salt
1/3 tspn pepper
1 ear of corn
3 oz chicken breast

Recipe Directions for Low Fat Chicken & Brown Rice Stir Fry

  1. Cook brown rice first and set aside.

  2. Saute garlic clove (thinly sliced) in Pam spray

  3. Add Chicken Breast, diced, before garlic browns

  4. separately blanch broccoli and peppers

  5. then add broccoli and peppers to stir fry and add water chestnuts and corn to stir fry

  6. add 2 tbspn water to pan, and cover for 2 min

  7. Remove veggies/chicken mixture from pan and stir in soy sauce

  8. serve over or with brown rice immediately
