A low fat carrot cake made into muffin form. Ideal for lunch or a break at work to satisfy a cake craving!

Recipe Ingredients for Low Fat Carrot Muffins

200 g Flour Wholemeal Self Raising
2 tsp Baking Powder
2 Eggs
1 small Banana
100 g Brown Sugar
2 Carrots
1 tsp Mixed Spice

Recipe Directions for Low Fat Carrot Muffins

  1. Grate carrots.

  2. Weigh & sieve flour, baking powder & spices into a large mixing bowl.

  3. Add sugar, carrots & eggs & mix well.

  4. Prepare muffin tin with muffin cases & spoon the mixture evenly between them.

  5. Sprinkle with porridge oats.

  6. Cook at 200C for 10min then 180C at 15min or until golden.

  7. Leave to cool on cooling rack.
