this is from the book "cook yourself thin" there's frosting, but i dont like frosting so i dont include it

Recipe Ingredients for low fat carrot cake

1 orange
1 1 fruit 2-1/8"+diameter lemon
3 medium eggs
1 cups light brown sugar
2 1/2 cups carrots, finely grated
1 cup self rising flour
1 tsp cinnamon
1/2 tsp ground ginger
1 tsp baking soda
1/4 tsp salt
1 cup ground almonds
1/4 cup chopped walnuts

Recipe Directions for low fat carrot cake

  1. Preheat oven to 350

  2. Line an 8" square pan with parchment, lightly brush with oil

  3. Grate the zest of the lemon and orange. Squeeze the orange juice and set aside.

  4. Whisk the eggs and sugar wth the zest wth a mixer for 5 minutes. Add grated carrot untl mixed.

  5. Slowly add spices, salt, ground almonds, baking soda and flour and quickly mix until combined. Mix in orange juice and walnuts using a spatula.

  6. Pour into the pan and bake for 40 minutes, or until a tooth[ick comes out clean. Cool in pan 15 minutes, then remove from pan. Chill in refrigerator. Cut into 9 pieces
