Adaptation of carrot cake into low fat muffins. Using applesauce in lieu of most of the oil makes very moist muffins.

Recipe Ingredients for Low Fat Carrot Cake Muffins

1 cup all purpose flour
1 cup whole wheat flour
1 cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp kosher salt
1 cup egg substitute
3/4 cup applesauce
1/4 cup light olive oil
3 cups grated carrots

Recipe Directions for Low Fat Carrot Cake Muffins

  1. In a large bowl, combine the first six ingredients.

  2. In another bowl, beat eggs and oil, then stir into dry ingredients until just moistened. Fill greased or paper-lined muffin cups two-thirds full.

  3. Bake at 350 degrees for 20-25 minutes or until toothpick comes out clean. Cool for 5 minutes before removing to wire racks.
