I make this for lunch or dinner. Sometimes for dinner. It's a delightful twist on an old favorite.

Recipe Ingredients for Low Fat Low Calorie Stir-Fried Rice

1/4 c Brown Rice, Cooked
1/4 tsp ginger, ground
1/8 c canned mushrooms stems and pieces, chopped
1/8 c Egg Beaters
1 T Soy sauce
1 oz diced boneless skinless chicken breast
1 oz cooked shrimp, chopped
1/4 tsp onion salt
1/4 tsp garlic powder
1 tbs chopped green onion
1 tbs frozen green peas

Recipe Directions for Low Fat Low Calorie Stir-Fried Rice

  1. Measure out all ingredients and have them ready because once you heat the pan things will move very fast and you don't wnat to burn or stick. After you have the rice measured out, sprinkle it with the ginger

  2. Spray small (6 or 8 inch) non-stick with a good healthy spray of non stick (I prefer the Olive oil flavored but pick whatever flavor you like) cooking spray

  3. Sprinkle in pan Onion powder and Garlic salt.

  4. heat the pan for about a minute on medium heat and start tossing ingredients in the pan stirring with no-scratch utensil. The last three ingredients should be:

  5. Egg Substitute (stir well until egg is cooked); Soy sauce (that way everything will get the flavor) and last but not least, green onion.

  6. Plate and serve.

  7. Make this a "surf and turf" by adding an ounce of cooked shrimp (sans tail of course) coarsely chopped. Add the calories of course but it's only going to add about 40 calories. Not many for such a good addition!
