Shrimps are very low in fat and calories! but because of cholesterol you should minimize its intake to once a week. If people only new how easy, tasty and healthy this recipe is! Roasting the garlic is the trick. For more interesting flavors, add steam broccoli, coliflower, and mushrooms without the extra calories! Consider cooking the mushrooms with the sauce.

Recipe Ingredients for Low Fat/Calorie Shrimp Scampi Pasta

1/4 cup garlic, roasted
1/2 teaspoon red pepper flakes
3 teaspoons olive oil
1 teaspoon smart balance spread
1/4 cup parmesean cheese
30 large Shrimps
1 cilantro to taste
6 5/8 oz whole wheat spaghetti
2 tablespoons lemon juice
1/2 cup scallions
1/4 teaspoon salt
1/4 teaspoon pepper

Recipe Directions for Low Fat/Calorie Shrimp Scampi Pasta

  1. Use one head of garlic and cut top off. Roast in oven for an hour, or use about 8 cloves of garlic, wrap in aluminum foil and cook in over for 30 minutes.

  2. Cook pasta per box instruction. Drain and rise with cold water.

  3. Heat oil, and add roasted garlic, lemon, some cilantro chopped, scallions, and red pepper flakes to taste.

  4. Add Shrimps and season with salt and pepper.

  5. Add veggies If any (optional see description), and add butter one minute before is done.

  6. Add pasta and tost.

  7. Serve and add parmesean cheese and chopped cilantro while still hot. Enjoy!
