Can serve as a light dinner or an appetizer. For a more filling meal, serve over whole wheat spaghetti and marinara sauce.

Recipe Ingredients for Low Fat, Low Calorie Eggplant Parmesan

1 medium eggplant
1/4 cup fat free italian dressing
1/2 cup bread crumbs
1 roma tomato
1/4 cup parmesan cheese

Recipe Directions for Low Fat, Low Calorie Eggplant Parmesan

  1. Preheat your oven to somewhere between 450F and 475F.

  2. Slice your eggplant into 1/4 inch slices.

  3. Lightly coat both sides of eggplant slices with Fat Free Italian dressing.

  4. Over a bowl/pan (for cleanliness) coat eggplant slices with bread crumbs.

  5. Cover a baking sheet with aluminum foil and plop those bad boys down.

  6. Bake for 5 minutes on each side.

  7. Remove from oven and sprinkle with diced tomatoes, parsley, and Parmesan (or feta.. really, choose a cheese you like).

  8. Voila!
