Low Fat, low calorie version of 'Cream' of Vegetable soup

Recipe Ingredients for Low Fat, low calorie 'Cream' of Vegetable soup

100 g celery
200 g onion
100 g turnip
100 g leek
200 ml skimmed milk
2 chicken stock cubes
100 g broccoli
3 cloves garlic
1 tbsp creme fraiche
1 1/2 litre water
1 tsp olive oil

Recipe Directions for Low Fat, low calorie 'Cream' of Vegetable soup

  1. using 1 tsp of olive oil, saute garlic, onion, celery, leek until translucent.

  2. add carrots and turnips cubed.

  3. add chopped broccoli.

  4. disolve two chicken/veg stock cubes in 1.5 litres boiling water and add to pot.

  5. bring to the boil.

  6. add 200ml skimmed milk.

  7. blend with hand blender.

  8. season to taste and stir in 1 tbsp of half fat creme fraiche if desired.
