2 tablespoons vegetable oil (1.5 Tbsp) 3 cloves garlic, minced 1/2 onion (version 1 - omitted in gluten free version 2) 1-2 serrano chile, seeded and chopped (you can substitute 1/2 - 1 jalapeno) 2 Bartlett pears or 2 gala apples (peeled) 2 Tbsp American Dream Spice mix or Cajun Spice or Curry Spice (original recipe called for 1-2 T. of Thai green curry paste) (Aleeca gave this mixed spice to me - cumin, coriander, cinnamon, coco, etc.) 1 can light coconut milk 2 cups low sodium, low fat chicken stock Large butternut squash (baked in oven at 375 for 40-50 minutes with a little water in pan) 2 - 3 cups spinach 2 tsps minced basil 1 roasted red pepper 2 tablespoons Thai fish sauce (Vietnamese fish sauce - (version 1 - omitted in gluten free fish sauce) 1/2 lime, juice (omitted in version 1 - added to gluten free version 1 pound shrimp, shelled and deveined or Italian sausage (shrimp was marinated with American dream spices, sautéed separately from soup then added at the end) salt and pepper to taste

14 oz Light Coconut Milk
12 Shrimp Uncooked Black Tiger
1 Peppers, Jalapeno
1 Onions
2 tablespoons Olive Oil
14 oz Light Coconut Milk
2 cup Spinach

Recipe Directions for Low Fat Butternut Squash & Shrimp Soup

Saute onion, garlic and chile in oil until onion is translucent, add pear (or apple), roasted red pepper (optional) and spices (or curry paste) and stir to blend. Add coconut milk, simmering for two minutes. Mix in blender. Return to heat and add butternut squash (either raw or baked) and chicken stock. Cover and cook over medium heat until squash is soft (30 minutes) or flavors are blended. Mix in blender, reheat. Add spinach simmer until cooked. Saute shrimp or sausage, (version 1 - fish sauce) (version 2 - lime juice) and cook for one minute. Garnish, if desired, with cilantro sprigs.
