This soup is so low cal that you can sip a cup any time just to keep your hunger under control. Its high in fiber and low in fat. If you are going to make it a main part of your meal you will need to add some cheese, croutons or bread as its not rich like soups that use cream.

Recipe Ingredients for Low Fat Broccoli Soup

2 teaspoons olive oil
1 medium onion, chopped
5 lbs fresh broccoli
1 potato, peeled
6 stalks celery
1 1/2 cups chicken broth
1/4 teaspoon marjoram or oregano
1 pinch cayenne pepper
3 c water
1 tablespoon chicken bouillon
1 1/2 cup skim milk

Recipe Directions for Low Fat Broccoli Soup

  1. Heat oil in a large skillet over medium heat; add onion and sauté until tender.

  2. Add broccoli, chicken broth, potato, celery, marjoram, and cayenne; bring to a boil over medium-high heat.

  3. Reduce heat to medium-low and simmer until broccoli is tender.

  4. Remove from heat and stir in milk. Purée in batches in a blender. Or use hand held blender to purée

  5. Heat through to serve.
