Low fat healthy raisin bran muffins

Recipe Ingredients for Low Fat Bran muffins

1 tbsp olive oil
2 tbsp applesauce
1/2 cup brown sugar
1/4 cup molasses
2 egg whites
1 cup vanilla soymilk
1 cup flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup raisins
1 1/2 cup All Bran Cereal

Recipe Directions for Low Fat Bran muffins

  1. 1. beat egg whites until firm peaks form

  2. 2. Combine oil, applesauce, brown sugar, molasses and beat until smooth

  3. 3. sift flour salt, baking soda, baking powder together. All alternatly with milk to molasses mixture

  4. 4. add bran and raisins

  5. 5. fold in eggs

  6. Bake at 400degress for 20 - 25 min
