Adapted bran muffin recipe for lactose intolerant diet

Recipe Ingredients for Low-fat bran muffins

3/4 c original cereal
3/4 c grape nuts cereal
1/2 c applesauce
1 c soy milk, fluid
2 egg
2/3 c brown sugar
1/2 t vanilla
1/2 c all-purpose flour
1/2 c whole wheat flour
1 t baking soda
1 t baking powder
1/2 t salt
1/2 c walnuts
1/2 c craisins
1/2 t lemon juice

Recipe Directions for Low-fat bran muffins

  1. Preheat oven to 375. Grease muffin pan or use liners.

  2. Mix together cereals and milk. Let stand for 10 minutes.

  3. Mix applesauce, eggs, brown sugar, vanilla and lemon juice.

  4. Beat in cereal mixture.

  5. Sift together all-purpose flour, whole wheat flour, baking soda, baking powder and salt.

  6. Stir into cereal mix until just blended.

  7. Fold in craisins and walnuts.

  8. Scoop into muff cups.

  9. Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.
