Recipe Ingredients for Low fat Bran Muffins

1 cup flour
1 cup bran
1/4 teaspoon salt
1/4 cup molasses
2 T. sugar
1 1/4 teaspoons baking soda
2 T. oil
1/2 cup currants
1 egg
1/2 teaspoon vanilla extract

Recipe Directions for Low fat Bran Muffins

  1. Preheat oven to 400. Oil a 12 cup muffin tin.

  2. Mix dry and wet ingredients in separate containers, add wet to dry mixing quickly, being careful not to over mix.

  3. Pour batter into muffin tin and bake 20 to 25 minutes.
