These yummy muffins are a staple on the Weight Watchers program at 1 pt. each.

Recipe Ingredients for Low Fat Bran Muffins

3 cups whole wheat flour
1 1/2 tsp baking soda
1 1/2 tsp cinnamon
4 1/2 tsp baking powder
1 1/2 tsp nutmeg
1 tsp pumpkin pie spice
20 oz bran cereal
1 cup raisins
4 cups skim milk
1 cup light brown sugar
8 oz egg beater
15 oz unsweetened applesauce

Recipe Directions for Low Fat Bran Muffins

  1. Mix first six ingredients together and set aside.

  2. Mix cereal, raisins and brown sugar and let stand for five minutes. Stir in egg and applesauce.

  3. Add flour mixture and stir until moistened.

  4. Spoon batter into muffin tins using 1/3 cup measure.

  5. Bake 18 to 20 minutes or until golden brown.

  6. Can be frozen in small Ziplock bags.
