The recipe called for 1/3 cup of oil but i replaced it by no fat vanilla yogurt.

Recipe Ingredients for Low fat bran muffin

1 1/2 cup wheat bran
1 cup milk 1%
1 tbs lemon juice
1/3 cup fat free yogurt
1 egg
2/3 cup brown sugar
1 cup flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla

Recipe Directions for Low fat bran muffin

  1. Preheat oven to 375 degree F

  2. Mix milk and lemon juice, than add to bran. Put aside.

  3. Combine yogurt, egg, brown sugar and vanilla.

  4. Add it to bran mixture.

  5. Sift flour, baking powder, baking soda and salt. Add it to first mixture and stir till blend.

  6. Bake 15 to 20 minutes.
