I made these for my daughter, and didn't tell her I used egg beaters instead of whole eggs until she had eaten half of her pancakes. She said her pancakes where fluffier this time and yummy! High marks from a teenager.

Recipe Ingredients for Low fat blueberry pancakes

2 cups reduced fat Bisquick
1 cup skim milk
1/2 cup egg white
1 cup blueberries, fresh

Recipe Directions for Low fat blueberry pancakes

  1. I just followed the directions on the box of Bisquick except for substituting egg beaters for the whole eggs.

  2. Combine Bisquick, 1/2 cup egg beaters, and milk. Whisk together until smooth. Gently fold in blueberries. Place griddle on medium to medium-low heat. Heat griddle until water dropplets sprinkled on top sizzle. Drop batter on to the size of pancake you desire, the bigger you make it the harder to flip. Once the edge starts to firm up and bubbles appear on top, flip the pancake over to cook the other side. My first 2 pancakes usually come out a little too dark (though still delicious) but the rest are usually perfect.
