Recipe Ingredients for Low Fat Blueberry Bran Muffins

4 1/2 cups wheat bran
3 cups nonfat milk
1 1/2 cups unsweetened applesauce
3 egg
2 cups brown sugar
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
1 tablespoon baking soda
1 tablespoon baking powder
1 1/2 teaspoons salt
3 cups blueberries

Recipe Directions for Low Fat Blueberry Bran Muffins

  1. This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 12 muffins.

  2. Preheat oven to 375 degrees F (190 degrees C).

  3. Grease muffin cups or use paper muffin liners.

  4. Mix together wheat bran and milk, and let stand for 10 minutes.

  5. In a large bowl, mix together applesauce, egg, brown sugar, and vanilla.

  6. Beat in bran mixture.

  7. Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.

  8. Stir into bran mixture until just blended.

  9. Fold in blueberries.

  10. Scoop into muffin cups.

  11. Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.
