Blueberry muffins with wheat bran

Recipe Ingredients for Low-Fat Blueberry Bran Muffins

1 1/2 cups wheat bran
1 cup skim milk
1/2 cup unsweetened applesauce
1 egg
2/3 cup brown sugar
1/2 tsp vanilla extract
1/2 cup all purpose flour
1/2 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 teaspoon salt
1 cup blueberries

Recipe Directions for Low-Fat Blueberry Bran Muffins

  1. 375 degree oven. Greease muffin cups or use paper

  2. Mix together wheat bran and milk, let stand for 10 minutes

  3. Mix together applesauce, egg, brown sugar, vanilla. Beat in bran mixture. Sift together flours, baking soda, baking powder, and salt. Stir into bran mixture until just blended. Fold in blueberries. Scoop into muffin cups

  4. Bake fot 15 to 20 minues, or until tops spring back when lightly tapped.
