Low Fat brownie muffins with beans for added protein. Serving size 1 mini muffin. Regular muffin counts as 2 servings.

Recipe Ingredients for Low Fat Bean Brownie Muffins

1 1/2 cup Beans, Great Northern, Mature Seeds
1 pkg Brownie Mix Low Fat Fudge Brownies
1/4 cup Unsweetened Apple Sauce

Recipe Directions for Low Fat Bean Brownie Muffins

  1. Ignore directions on brownie mix box.

  2. Preheat oven to 350 degrees F.

  3. Mash or whirl in food processor 1 1/2 cups cooked white beans. (I cook my own with no salt. You can use canned beans, rinse well to wash off some salt.).

  4. Stir in 1/4 cup unsweetened applesauce.

  5. Stir in brownie mix. NOTE: (I used what we still had in pantry from pre-diet days. It is too high in sugar! You can probably find a mix with better nutrition profile. Select one about 20 ounce dry weight.)

  6. Spray muffin pans with canola spray.

  7. I made 9 regular muffins and 12 mini muffins.

  8. Spoon 1 (one) tablespoon batter into mini muffin tins; 2 (two) Tablespoons into regular-sized muffin tins.

  9. Bake until toothpick inserted in center comes out clean. This take about 20 minutes for mini muffins and about 25 minutes for normal muffins.

  10. Serving size 1 mini. A regular sized muffin counts as 2 servings.

  11. I make minis for myself, and regular for my hubby.
