relatively low fat & low calorie muffins. egg could be replaced with silken tofu and I like to replace the splenda with truvia.

Recipe Ingredients for Low fat bb muffins

3/4 cup all purpose flour
1/2 cup whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/4 cup splenda
1 egg
1/4 cup yogurt, non fat, plain
1 tbsp vegetable oil
2 tbsp applesauce, unsweetened
1 tsp vanilla extract
1 cup (2 medium) bananas, smashed
1/2 cup blueberries, frozen

Recipe Directions for Low fat bb muffins

  1. preheat oven to 350 degrees

  2. mix/sift together first four ingredients, everything dry.

  3. in a large bowl mash the bananas and add sugar or substitute, egg, yogurt, oil, applesauce and vanilla extract.

  4. add dry ingredients and blueberries to banana mixture. only mix until just combined.

  5. spoon batter into paper lined muffin tins

  6. and bake from 18-22 minutes.

  7. Makes 8 medium or 12 small muffins.
