A traditional Bulgarian pastry filled with an egg and feta cheese mixture. The traditional recipe calls for making one's own pastry dough, but this quicker version is made with phyllo pastry sheets and is still very tasty. The low-fat version comes from substituting more cottage cheese for feta cheese.

Recipe Ingredients for Low-fat Banitsa with Phyllo Pastry

454 grams Phyllo Pastry Sheets
1 cup (8 fl oz) Yogurt, Plain, Low Fat, 12 Grams Protein Per 8 Ounce
100 grams Feta Cheese
1 1/2 cup 1% Lowfat Cottage Cheese No Salt Added
4 medium Egg, Whole
1 1/2 tbsp Butter
1/2 can or bottle (12 fl oz) Club Soda

Recipe Directions for Low-fat Banitsa with Phyllo Pastry

  1. Preheat the oven to 250C / 450F. Grease a large rectangular cooking pan, almost as large as an unrolled phyllo pastry sheet.

  2. In a large bowl, crumble the feta cheese and combine with the cottage cheese, mixing well. Add in the eggs and the yogurt and whisk with a fork until well mixed.

  3. Unfurl the packet of phyllo pastry sheets on a clean countertop.

  4. Layer 3 sheets on the bottom of the pan. Add 2-3 heaping tablespoonfuls of the cheese mixture and spread it evenly. Add 2-3 slivers of butter, spread out around the pan.

  5. Arrange 2-3 phyllo pastry sheets on top and repeat the procedure. You should aim to finish the egg and cheese mixture right before adding the last 2-3 phyllo pastry sheets to the top of the pastry.

  6. With a sharp knife, cut the banitsa in 6 or 8 large rectangles.

  7. Pour the club soda evenly over the pan so it soaks into the pastry. Place in the oven and bake for 40 minutes or until the top is brown.

  8. Take out of the oven and let cool for a time. Cut into rectangular slices (this recipe assumes 12, but you can make them different sizes). Enjoy!
