Recipe Ingredients for Low-fat Banana Nut Pudding

6 bananas, sliced
1 tbsp salted butter
3/4 cup walnuts, chopped
1/4 tsp sea salt, hickory smoked
1/4 tsp nutmeg
1/4 tsp cinnamon
1 1/2 tsp brown sugar
1/8 tsp black pepper, freshly ground
3/4 cup low-fat cottage cheese
2 tsp vanilla extract
1 tsp white wine vinegar
1 pinch of cayenne pepper

Recipe Directions for Low-fat Banana Nut Pudding

Heat butter over medium heat in large skillet. Add dry seasonings and vanilla extract. Stir all ingredients so as to cover walnuts. Add bananas. Once bananas have broken down and become soft, add cottage cheese, mix until cottage cheese is no longer visible and has melted into the sauce. Add remaining ingredients. Cook and stir until only some bananas are visible in sauce. Transfer pudding into a large bowl and blend or emulsify. Serve warm or cold.
