Recipe Ingredients for Low Fat Banana Nut Muffins

2 eggs
1/4 cup splenda
1/4 cup sugar
2 ripe bananas
1/4 cup unsweetened applesauce
1/3 cup skim milk
1 tbsp vegetable oil
1 tbsp vanilla
1 cup flour
3/4 cup whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup chopped walnuts

Recipe Directions for Low Fat Banana Nut Muffins

  1. Preheat oven to 325 degrees. Spray a pan with non-stick cooking spray.

  2. Beat eggs and sugar in a large bowl until light and fluffy (about 5 minutes). Beat in bananas, applesauce, milk, oil, and vanilla.

  3. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir flour mixture into banana mixture, mixing until just blended. Fold in walnuts. Pour batter into muffin pan.

  4. Bake for 30 minutes or until toothpick inserted in center of muffin comes out clean.
