These are delicious, moist muffins with barely any fat.

Recipe Ingredients for Low-Fat Banana Muffins

2 cups whole wheat pastry flour
1/3 cup sugar
1 1/4 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
2 bananas, mashed
1/2 cup unsweetened applesauce
3 egg whites, beaten until frothy (the more the better)

Recipe Directions for Low-Fat Banana Muffins

  1. Mix together dry ingredients

  2. Beat together bananas, applesauce, and egg whites (I used a hand blender and it worked great).

  3. Gently mix wet and dry ingredients. Ladle into muffin tins sprayed with cooking spray. Bake for about 15 minutes or until toothpick inserted comes out dry.
