2 eggs, large
3/4 cup sugar
3 bananas, mashed large ripe
1/3 cup buttermilk, nonfat
1 tbsp. canola oil
1 tbsp. vanilla
1 cup all-purpose flour
3/4 cup whole wheat flour, white
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

  1. Preheat oven to 325 degrees. Spray a loaf pan with nonstick cooking spray.

  2. Beat eggs and sugar together in a large mixing bowl using an electric mixer.

  3. Whisk in bananas, buttermilk, oil and vanilla.
