This is by far the best banana bread I have ever had and it ranks even higher because there is no fat in it. I make my own applesauce and make it chunky with apple pie spices (Cinnamon, allspice, cloves, nutmeg, etc). The spices help add flavor and if you use a variety of apple types you get a nice flavor without needing any sugar. My two picky eaters love the applesauce by itself!

Recipe Ingredients for Low-Fat Banana Bread

4 ripe bananas, mashed
2 1/4 cups flour
3/4 cup sugar
1 tsp Baking Soda
1/2 cup unsweetened applesauce
1 tsp vanilla extract
2 eggs

Recipe Directions for Low-Fat Banana Bread

  1. Preheat oven to 350 degrees F.

  2. Combine the wet ingredients in a bowl, mix well.

  3. Combine the dry ingredients in a separate bowl, mix well.

  4. Gently fold the dry ingredients in to the wet ingredients and mix until just moistened and the flour is incorporated. Do not overmix.

  5. Bake for 50-60 minutes or until a toothpick comes out clean. (Generally it is actually a bit longer than an hour bake time.)
