Recipe Ingredients for Low Fat Baked Potato Salad

3 pounds baking potatoes
1/2 lb. bacon
1/4 c. margarine
2 c. light sour cream
1 t. salt
1 t. pepper
1/4 c. scallions
8 oz. Fat Free Cheddar

Recipe Directions for Low Fat Baked Potato Salad

  1. Preheat oven 400.

  2. Wash potatoes, pierce with fork. Baked until tender - about 1 hour.

  3. Let cool, and cut into bite size pieces.

  4. Cook bacon until crisp.

  5. Combine butter, sour cream
