A low fat eggplant spread that's great in a whole wheat pita or tortilla for lunch or as a party appetizer with baked chips.

Recipe Ingredients for Low Fat baba ghanoush

1 large eggplant
1 clove garlic
2 teaspoons tahini
1/4 cup lemon juice
1/4 cup parsley
1 tomato, chopped
1/2 teaspoon smoked paprika

Recipe Directions for Low Fat baba ghanoush

  1. Roast eggplant, whole in a 450 degree over until completely deflated. About 20 minutes.

  2. When cool, peel eggplant and chop innards into a bowl

  3. Add crushed garlic (more to taste), tahini, juice of a whole lemon, chopped tomato, parsley and paprika.

  4. Allow flavors to combine in the refrigerator for an hour or more before serving.
