Recipe Ingredients for Low fat baba ganouj

4 cups eggplants, roasted and peeled
1/4 cup garlic, minced
1 cup yogurt
1/2 cup lemon juice
2 tsp salt
1 tsp pepper
1 tsp cumin
1 tsp paprika

Recipe Directions for Low fat baba ganouj

  1. roast eggplant in over for 45 minutes

  2. peel and smash

  3. let cool

  4. mince garlic with salt and pepper

  5. fold in garlic, yogurt and lemon juice with eggplant

  6. season with cumin and paprika
