low-fat muffins. I used Becel RSF margarine, but I couldn't get it to show up on the recipe, so I put light margarine instead

Recipe Ingredients for Low fat apple muffins with raisins and dates

3 cups whole wheat flour
1 cup oats
1 tsp baking soda
1/2 cup raisins
1/2 cup dates
3/4 cup chopped apple
1 cup brown sugar
1 cup light margarine
1 tsp vanilla extract
2 tsp cinnamon
2 eggs
2 tbsp molasses
1 cup water, as needed

Recipe Directions for Low fat apple muffins with raisins and dates

  1. Preheat oven to 350F

  2. mix together the flour, oats and baking soda.

  3. add raisins, dates and apple pieces

  4. In a separate bowl, cream together margarine and brown sugar. mix in eggs, vanilla extract, cinnamon and molasses

  5. mix the wet ingredients with the dry ingredients. Add water as needed, to form a thick creamy batter.

  6. Pour into muffin tins, back for 18-20 minutes or until dark brown on top.
