These muffins are very moist, have virtually no fat, and are high in fiber.

Recipe Ingredients for Low Fat Apple-Carrot Bran Muffins

2 c. all-bran cereal
1 c. flour
1/4 c. brown sugar
1 1/4 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
2 tbsp. honey
2 egg whites
3/4 c. skim milk
1/2 c. unsweetened applesauce
3/4 c. chopped apple
3/4 c. grated carrots

Recipe Directions for Low Fat Apple-Carrot Bran Muffins

  1. Preheat oven to 350 and line tins with muffin papers.

  2. Mix first six ingredients in a large bowl.

  3. Stir honey, egg whites, milk and applesauce in a separate bowl.

  4. Make a well in the dry ingredients, pour the wet ingredients in the well, and gently stir until the mixture is no longer wet.

  5. Fold in the chopped apple and grated carrots.

  6. Bake at 350 for 20-25 minutes, or until a toothpick can be inserted and drawn out clean.
