Pumpkin puree meets low fat, no butter ingredients to make a wonderful, healthy - and delicious - pumpkin cookie!

Recipe Ingredients for Low-Everything Pumpkin Cookies

2 cups Flour
1 cup Sugar
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Allspice
1 tsp Cinnamon
1/8 tsp Salt
1 cup Pumpkin (not pumpkin pie mix)
1/2 cup Applesauce (unsweetened)
1 tsp Vanilla

Recipe Directions for Low-Everything Pumpkin Cookies

Preheat the oven to 350 degrees. Mix together the applesauce, pumpkin, sugar, and vanilla. In a separate bowl, mix together the dry ingredients (flour, baking soda, baking powder, allspice, cinnamon, and salt). Then take the dry ingredients and gradually incorporate them into the pumpkin mixture. Once finally incorporated and mixed thoroughly, scoop out cookies onto a cookie tray. Make sure to have either sprayed some sort of non-sticking baking spray or put down wax paper so that the cookies don't stick! Cook for about 18 - 22 minutes or until golden brown around the edges. Eat!
