3 medium potatoes, peeled and grated
3/4 c egg substitute
1 1/2 tbsp canola oil
1/2 tsp salt
1 med onion

  1. process everything in food processor until almost pureed

  2. Pour into 7x9 pan and bake about 1.25 hours, uncovered at 350 degrees
