3rd adaptation from a French recipe already posted on CC. I'm trying to replace eggs with eggwhites. This becomes a lemon curd that can be used for a lemon meringue pie. The secret to the recipe is just to keep beating and stirring. This recipe is also tweaked to substitute out the sugar. After some research I decided to use mostly Stevia granulated. But since I find that Splenda give desserts that sweet kick I like, I added a few packets. I find that the final result has a different texture than I'm used to, maybe only one full egg wasn't enough. My next try will increase to 2 full eggs and 6 egg whites.

Recipe Ingredients for Low cholesteral no sugar French lemon cream recipe

2 fruit without seeds Lemons
80 grams Stevia
1 egg Medium
8 large Egg, White
20 grams Corn Starch
3 packet SPLENDA No Calorie

Recipe Directions for Low cholesteral no sugar French lemon cream recipe

  1. Remove zest from lemon and squeeze out all juice (minus seeds)

  2. Put aside

  3. Put water on to boil

  4. While waiting for water to boil, beat egg and egg whites, adding stevia and splenda bit by bit

  5. When the mixture is a little moussey, Maizena, the zest and the lemon juice

  6. Keep beating

  7. Add boiling water progressively while beating

  8. Put mixture in a pot and cook on stove on low for a few minutes.

  9. Make sure to keep stirring

  10. The mixture will start to get firm (like a pudding).

  11. Take off stove and continue to stir while it cools. Keep at it until its lukewarm

  12. Put lemon cream mixture in the fridge. Beat again before serving.

  13. Serve cold.
