Recipe Ingredients for Low-Chol Pumpkin and Sage Quick Bread

6 oz apple sauce
1/4 c fresh sage
1 c all-purpose flour
2 t baking powder
1/2 t ground cinnamon
1/4 t grated nutmeg
1/4 t ground cloves
1 t salt
1 c pumpkin, solid packed
1 c light brown sugar, packed
1/2 c egg substitute

Recipe Directions for Low-Chol Pumpkin and Sage Quick Bread

  1. Preheat oven to 350 degrees. Spray loaf pan with cooking spray. Heat applesauce in a medium sauce pan. Cut the sage into thin strips and add to pan. Transfer mixture to a bowl and let cool.

  2. Meanwhile, whisk together flour, baking powder, cinnamon, nutmeg, cloves and salt.

  3. Whisk together pumpkin, sugar, egg substitute, and applesauce mixture. Add flour mixture, and whisk until incorporated. Pour mixture into pan. Smooth top gently using an offset spatula.

  4. Place pan on a rimmed baking sheet, and bake until a tester inserted into center comes out clean, about 30 minutes. Transfer pan to a wire rack and let cool 15 minutes. Invert pan to remove bread, transfer to wire rack, top side up, and let cool completely. garnish with whole sage leaves before serving.
