Makes 14 servings



Low Carb nut bread. 1/4 to 1/2 teaspoon of liquid sweetener like stevia or your favorite. I used 1/2 teaspoon. Grind pecans into pecan meal or buy already ground pecan meal and use 8 oz about 2 cups. I figure there are 14 slices of this bread so one serving is one slice. It is high in calories so maybe make an open faced sandwich.

Recipe Ingredients for Low Carb Toasting Bread

8 oz Flaxseed Meal
8 oz (20 halves) Pecans
1/4 cup Sesame Seeds
1/4 cup Flaxseed
4 tsp Baking Powder
1/4 tbsp Xanthan Gum
1/2 tsp Salt, Table
1 1/2 cup Milk, Reduced Fat, Fluid, 2% Milkfat
8 large Egg, White
1 serving Organic Liquid Sweetener

Recipe Directions for Low Carb Toasting Bread

  1. Combine all wet ingredients and mix for 2 mintues. Combine all dry ingredients, mix well. Slowly add dry ingredients to wet. Mix for 2 minutes until it becomes firmer. Pour into parchment lined loaf pan sprayed with Pam. Bake on 375 degree F oven for 45 minutes rotate in oven and back for another 35 to 45 minutes. Let cool, slice and enjoy.

  2. I freeze it and slice of a piece and toast it when I want it.
