Love mom's stuffed peppers, but dont love the carbs from all that white rice. You dont even miss the starch is this version with added veggie goodness.

Recipe Ingredients for Low Carb Stuffed Peppers

4 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
5 medium White Button Mushrooms Packaged
1/2 cup, chopped Onions
1/2 cup, diced Celery
452 4/5 grams Ground Turkey Lean
411 4/5 grams Diced Tomatoes
1 cup Tomato Sauce
1 tsp Italian Seasoning
1 tbsp Olive Oil
1/2 c feta cheese

Recipe Directions for Low Carb Stuffed Peppers

  1. remove tops and seeds from peppers and place in boiling water for 3-5 min

  2. dice mushrooms, celery, onion, and saute in olive oil until soft

  3. combine ground turkey, italian seasoning, 1/2 of feta, and veggies

  4. stuff peppers

  5. mix together tomato sauce and diced tomatoes

  6. place peppers in baking dish, top with tomato mixture and remaining feta

  7. bake at 375 for 45-50 minutes (until turkey is cooked through)
