Great recipe for those of us with diabetes or eating low carbohydrates.

Recipe Ingredients for Low Carb Stuffed Peppers

1 lb ground beef
2 green peppers
1/4 cup onion, diced
1/2 cup tomato, diced
1/4 cup cheddar cheese, shredded
1 teaspoon garlic powder
1 Salt and pepper to taste

Recipe Directions for Low Carb Stuffed Peppers

  1. Core and de-seed the peppers. Boil in salted water for 5 minutes. For firmer peppers, don't boil. Lightly sprinkle salt inside the peppers.

  2. Brown the ground beef and onion. Drain and return to pan. Stir in tomato and cheddar cheese.

  3. Spoon the beef mixture into the peppers and place the peppers in a small casserole dish.

  4. Cook at 350 for 20-25 minutes.
