The mushrooms should be portabello caps (caloriecount doesn't recognize that) - estimate that each cap would yield 1/2 cup of chopped mushroom.

Recipe Ingredients for low-carb stuffed mushrooms

2 c. mushrooms
8 tbs. cream cheese
1/4 c. grated parmesan cheese
2 tbs. chopped chives
1 egg yolk
1/2 cup crab

Recipe Directions for low-carb stuffed mushrooms

  1. Mix cheeses, egg, and chives together to form a paste.

  2. Gently fold in the crap.

  3. Clean mushroom caps and remove stems.

  4. Spread about two tablespoons of mixture into the inside of each cap. Sprinkle with a little extra parmesan.

  5. Bake for 30 minutes at 350 degrees. Reheats well in oven or microwave. Delicious with sour cream.
