Low Carb Appetizer. Calorie and carb count will depend on the size of the mushrooms and how thin they are. Also on amount of stuffing used. All cheese can use low calorie, no fat cheese.I used Laughing Cow French Onion but could not get the calorie count here - it is 35 calories per wedge. Blue cheese would be wonderful. Suggest using parmesan cheese on top. Can substitute other meats for bacon (sausage etc. or leave out for a vegetarian version). Great with a glass of red wine!

Recipe Ingredients for Low Carb Stuffed Mushrooms

4 ounces mushrooms, portabela
1/4 cup onion, chopped
1 ounce bacon, chopped
2 garlic cloves
1/2 ounce gruyere cheese
2 tablespoons parmesan cheese
1 ounce goat cheese
1 ounce red wine
1 teaspoon vinegar, red wine
1 tablespoon oil

Recipe Directions for Low Carb Stuffed Mushrooms

  1. Preheat oven to 400 degrees.

  2. Scoop out portabela mushrooms and remove stems.

  3. Mix red wine, red wine vinegar and 2 teaspoon of olive oil. Brush on mushrooms.

  4. Saute onion and garlic in oil. Add seasonings. Add cooked bacon bits. Add one mushroom (1 ounce- 2 ounces.) or mushroom stems. Add seasoning (Spike or as desired). I used a little thyme, pepper and salt. Season to taste.

  5. When slightly cooled add cheese and bacon.

  6. Add one tablespoon of red wine to stuffing mixture or to taste.

  7. Stuff four portabela mushrooms. Sprinkle parmesan cheese on top.

  8. Place on baking sheet sprayed with Pam and bake for 20-40 minutes at 400 degrees until mushrooms are cooked through.

  9. Enjoy!
