Low Carb Spicy Sausage and Chicken Chowder Recipe

It's hard to find low-carb soup, so I decided to invent one and it's really good. I use Portuguese linguica or Mexican chorizo for the spicy sausage.

Recipe Ingredients for Low carb spicy sausage and chicken chowder

10 cups water
3 breasts of chicken
2 oz spicy sausage
1 cup diced celery
1 cup sliced carrots
3/4 cup diced onion
2 tbsp minced garlic
1/4 cup lemon juice
2 tbsp tomato paste
1 tbsp salt
1 tsp pepper
2 tsp parsley
1 tsp basil

Recipe Directions for Low carb spicy sausage and chicken chowder

  1. Directions

  2. Boil chicken in the water with onion, garlic, lemon juice, salt, and pepper until cooked through (about 1 hour over medium heat.)

  3. Remove chicken breasts from water and shred or dice the chicken into bite-size chunks, then put the chunks back into the pot along with the tomato paste, celery, carrots, and sausage. Let simmer over low-med heat for about 30-45 minutes; stirring occasionally.

  4. Stir in parsley and basil. Simmer for another five minutes, then serve immediately.
